Gliadin is the primary allergen in wheat (as well as related grains such as malt) and serves as the core allergenic component in gluten-related disorders.
As a subclass of wheat gluten proteins, gliadin is characterized by its insolubility in water and salt solutions, as well as its resistance to digestion by gastrointestinal enzymes in the human body. It typically enters the intestine as intact protein fragments, which are recognized by the immune system as foreign invaders, thereby triggering abnormal immune responses. Specifically, ω-5 gliadin has been identified as the major allergen responsible for Wheat-Dependent Exercise-Induced Anaphylaxis (WDEIA) and immediate-type wheat allergies in children; it is also a key sensitizing agent in occupational baker’s asthma.
