Bovine Casein is one of the predominant allergens in cow's milk and serves as the core allergenic protein responsible for milk allergies. Milk proteins are broadly categorized into caseins (~80%) and whey proteins (~20%). Casein comprises several subtypes, including αS1-, αS2-, β-, and κ-casein. Compared to whey proteins, caseins exhibit stronger antigenicity and allergenicity and are officially classified as the major milk allergen (Bos d 8).
Among these, αS1-casein is the most common subtype responsible for triggering IgE-mediated sensitization. It is prone to inducing strong immediate or delayed hypersensitivity reactions.
