Staphylococcal Enterotoxin C (SEC) is a heat-stable protein toxin secreted by Staphylococcus aureus. As a C serotype of staphylococcal enterotoxins, it is the second most common causative agent of staphylococcal food poisoning. SEC can be further subdivided into three subtypes: SEC1, SEC2, and SEC3.

It is produced by pathogenic Staphylococcus aureusstrains carrying the secgene. As one of the eight classic serotypes, SEC proliferates rapidly in nutrient-rich substrates high in protein or starch, such as dairy products, ready-to-eat meats, leftover rice, and chilled processed cakes—foods identified as high-risk for contamination.

As a thermostable soluble protein with a molecular weight between 26–30 kDa, SEC exhibits heat resistance second only to Enterotoxin B, remaining active even after heating at 100°C for 30 minutes. It is also resistant to proteolytic hydrolysis by digestive enzymes in the gastrointestinal tract, meaning conventional cooking cannot fully eliminate its toxicity. The toxic dose is extremely low, with ingestion of as little as 1 microgram sufficient to trigger poisoning.
