Benzo[a]pyrene (BaP) is a polycyclic aromatic hydrocarbon formed by the fusion of benzene and pyrene. Depending on the fusion position, it exists as benzo[a]pyrene and benzo[e]pyrene isomers, with benzo[a]pyrene being the more hazardous and classified as one of the three major carcinogens. It is stable under alkaline conditions but reacts readily with acids. It can also undergo photo‑oxidation upon exposure to sunlight, fluorescence, or ozone. BaP primarily originates from incomplete combustion of wood, grain hulls, coal, petroleum, gas, tobacco, and other organic materials. It contaminates air, soil, and water through deposition of smoke and dust particles, subsequently entering the food chain. It also contaminates foods during baking, roasting, smoking, and other processes.
