Acrylamide is a by‑product of the Maillard reaction in foods, with higher yields in foods that develop stronger aromas. It is neurotoxic to both humans and animals.
In daily life, acrylamide is found in cosmetics, tobacco smoke, and starchy foods cooked at high temperatures (>120 °C) as well as in drinking water. It is highly water‑soluble and can enter the body through the skin, mucous membranes, respiratory tract, and gastrointestinal tract. It exhibits genotoxicity, immunotoxicity, neurotoxicity, reproductive toxicity, and carcinogenicity. The International Agency for Research on Cancer (IARC) classified acrylamide as a Group 2A carcinogen in 1994, and it is listed as a substance of very high concern (SVHC) in the second batch of the REACH regulation. On October 27, 2017, the IARC listed acrylamide in its preliminary compilation of Group 2A carcinogens.
